Looking for an easy dinner option? Here at 2Bites, we have been loving homemade poke bowls – especially as the weather gets warmer!
Start with a simple bowl of rice, and then add as many toppings as you like. Chopped tomatoes, cucumber, avocado, capsicum, lettuce, and cabbage are all delicious options. For protein, you can add your favourite meat, fish, tofu or even a boiled egg – we’ve gone with crumbed chicken here. Top with some mayonnaise, or any preferred sauce and done! If you’re feeling a little fancy, some chopped up peanuts on top will also add a delicious crunch.
Not only is this dish super easy and flexible, but there are also so many ways you can get your kids involved; they can help choose the toppings at the supermarket, help you chop up all the ingredients and then everyone can make their own poke bowl at the table.
